L & L Lunch was established in 2015 by the Gomez family as a Food Truck Catering company in the city of Los Angeles, after being in the food truck industry for over fifteen years. In 2017 the company was able to use its experience in the food industry to open its first restaurant, Guasave Roll which served Mexican/Sushi in the city of Ontario. Through many trials, the Gomez family discovered the lack of Mexican food in an expanding Vegan community and decided to venture into the plant-based scene. Guasave Roll rebranded as Madre Tierra focused on its goal to offer the plant-based community the ability to experience traditional Mexican cuisine. On September 2021 Madretierra expanded their menu to inlcude Vegeterian options.
